CHAUL BARA / RICE FRITTERS
Being born and brought up in western Odisha the name of "Chaul bara" will always put a glow in the face. No one can forget this street food , the small round delicacies which keeps you craving. Chaul bara/rice fritters is made with rice and urad dal, deeply fried and you can find it in any corner of the town.Along with tamarind chutney its a bliss in the rainy season. But when you are away from your hometown, you need to make it by yourself to satisfy your cravings.To make the perfect crispy chaul bara, I made a lot of trial with the recipe of my mother and finally I did it after a lot of attempts. So here I am giving my recipe. Various modifications are made with the basic recipe in various regions of western odisha. You can eat it with tomato chutney or tamarind chutney or you can make your own modifications.
Ingredients-
1. Usna rice/parboiled rice-900 gm
2. Urad dal-300 gm
3.For the masala - ginger(50 gm),garlic(50 gm),dried red chilli (few nos)
4. carrom seeds(optional)
5.Refined oil
6.salt as and when required.
Recipe-
1. Wash and soak the rice and urad dal separately for 8-10 hour.Grind them one by one. Remember to add water gradually and not too much so as to make the batter thick and not flowy. Mix them and whisk it properly. Add salt. Keep them for 2-3 hours for fermentation.
2. For masala - grind all of them together with less water ,if required. You can add red chilly as per your requirement.

3. Add the batter and masala and again whisk it together so that batter is ready.

4. Heat oil in a deep kadhai and keep it in high flame. Then take small amount batter in your hand and make small round balls and fry it till golden brown in colour.
Special note - The masala gives all the flavour so dont forget to put in proper amount. Rice makes it more crispy so if you dont want it to be crispy,add more urad dal. No need to add baking soda if you have fermented it properly.
Chutney recipe-
Tomato chutney- Take 2 tomatoes ,few coriander leaves, 1-2 chilli, 2-3 garlic cloves and blend together to make a smooth paste.Add salt as required.
Tamarind chutney- Soak few tamarind pulp in water. After half an hour remove the pulp and squeeze to keep the water.Crush garlic and 1-2 chilli and coriander leaves , add to the tamarind water. Add little sugar and salt. Make it bit watery.Add panch-poran and curry leaves in oil and add to this mixture(optional).
